Carrot Cake Recipe

Easter is just a few days away! (4/17/2022) Here is a yummy Carrot Cake recipe to share with your family and friends on Easter Sunday.

Ingredients

Cake:

4 eggs

1 Cup vegetable oil

2 Cups sugar

2 Cups flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

2 Cups grated carrots

Icing:

1 stick butter, softened

1 8oz package cream cheese, softened 

1 pound powdered sugar

2 teaspoons vanilla 

1 Cup pecans, chopped finely (optional, or can be substituted with walnuts)

 

Instructions

Cake:

- Preheat oven: 350 degrees

- Set out butter and cream cheese for icing to soften 

- Mix together eggs, oil and sugar

- Combine flour, baking powder, baking soda, and cinnamon

- Stir dry ingredients into wet ingredients 

- Add carrots, mix well

- Heavily grease bundt pan with butter

- Pour batter into pan and bake for 50 minutes or until a toothpick is inserted and comes out clean (no raw batter when pulled out)

- Leave cake in pan until completely cooled

Icing:

- Cream butter and cream cheese together

- Mix in vanilla and powdered sugar 

- Mix in nuts

 

- Remove cooled cake from pan, ice cake, and enjoy
