In leu of today being St. Patrick’s Day I’m sharing a recipe that frequent’s my mom’s kitchen for a long as I can remember. (Her family has a decent amount of Irish heritage so it’s extra fitting 🙃) Bonus; she’s a mother of 7 and a school teacher so she’s a master at using minimal dishes and making quick/easy dinners, and this definitely falls into those categories.
☘️ Shepherd’s Pie (a.k.a. Irish Cottage Pie)
Ingredients
1lb Sausage (she uses Bob Even Original)
6oz can of gravy
12oz bag of frozen mixed veggies (she uses corn, peas, carrots and green bean mix)
1 package of original Bob Even mashed potatoes
Instructions
Pre-heat oven to 400 degrees
Brown sausage
Add veggies and gravy to browned sausage
Put mixture in a 9x13 baking dish
Top sausage and veggie mixture with an even layer of mashed potatoes
Bake for about 30 minutes, until gravy is bubbling and potatoes are browned to your liking
